Last year Little Hunter asked me to make him a Snickers Ice Cream Cake for his birthday. So, I threw one together for him. I didn’t really know what I was doing. I just threw all this stuff in a springform pan and put it in the freezer. It was delicious.
This year, Miss P asked me to make her the same Snickers Ice Cream Cake. I didn’t have the heart to tell her that I didn’t write down how I did it. So, I tried to re-create it. It was similar, but I don’t think it was the same.
It’s basically three layers. Each layer is covered in caramel, chocolate, & peanuts.

- Snickers Ice Cream Bars & Vanilla Ice Cream
- Cool Whip
This cake came out delicious! We devoured it. And most importantly, Miss P got her Snickers Ice Cream Birthday Cake!
I thought I’d share the recipe with you. But mostly because I want to remember how I did it if the kids asked me to make it again.
Snickers Ice Cream Cake Recipe
INGREDIENTS
- 1 box of brownie mix (and the ingredients to make them)
- carmel
- chocolate syrup
- 1/2 Cup peanuts
- 3 Snickers Candy Bars
- 5 Snickers™ Ice Cream Bars (I found them at the Dollar Tree.)
- vanilla ice cream
- 1 container of Cool Whip™
TOOLS
- springform pan
- knife
- food processor
- spatula
- parchment paper
HOW TO
- Bake the box of brownies in the springform pan. (Consider adding an extra egg to make them more “cake” like.)
- Cool.
- Do not remove from pan.
- Add a lining of parchment paper around the inside wall of the springform pan.
- Drizzle caramel and chocolate syrup over brownies.
- Chop peanuts in a food processor. Sprinkle 1/4 cup over caramel and chocolate syrup.
- Freeze for 30 minutes.
- Slice Snickers Ice Cream Bars in half and arrange on top of peanuts.
- Fill in gaps with vanilla ice cream until you are satisfied with the layer.
- Freeze for 30 minutes.
- Thaw Cool Whip™
- Drizzle carmel and chocolate syrup on top of vanilla ice cream.
- Sprinkle the rest of the peanuts
- Add the container of Cool Whip. Smooth out.
- Drizzle another layer of caramel and chocolate syrup on top of Cool Whip™
- Crumble 3 Snickers™
- Candy Bars in a food processor.
- Sprinkle crumbled candy bar on top of Cool Whip™
- Freeze for at least 2 hours.
